Recipe Challenge: Jamie's Cold Soup Recipe
Gazpacho - The Easy Way!
- 26-32 Ounces Crushed or strained tomatoes
- 2 peeled cucumbers
- one piece quality bread
- 1 red pepper seeded, cored and chopped
- one small clove garlic
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- Soak bread in water and lightly squeeze out excess
- Add all ingredients to a blender (perferaby a vitamix)
- blend until smooth
- chill 24 hours before serving
